This week's featured produce on "Getting Fresh with Mike" is rhubarb! Mike Linden made a "Rhubarb Oatmeal Crumble" so here's the recipe.
1 lb. diced rhubarb
1/4 cup sugar
1/4 tsp. cinnamon
1 tbsp. butter
1/4 cup water
TOPPING:
2/3 cup sifted all-purpose flour
1/8 tsp. salt
1/4 tsp. baking soda
2/3 cup quick cooking rolled oats, uncooked
1/3 cup sugar
1/4 cup melted shortening (or butter)
1) Arrange rhubarb in shallow, greased 8x8 baking dish.
2) Sprinkle with sugar and cinnamon, dot with butter and add water.
3) Mix all of the topping ingredients together in separate bowl; spread topping evenly on top of the rhubarb
5) Bake at 350° for 40 minutes or until golden brown
6) Let cool and serve warm!
Mike Linden says be sure to tweak the recipe and make it your own! For example, he used wheat flour rather than all-purpose white flour to achieve a coarser topping texture. He says this recipe is perfect for picky kids and for those who have never tried rhubarb before!
